Another Foodie Friday submission from The Erratic Cook, a chef in her own mind from right here in Okotoks.

It is that time of year again when the pesky squirrel will raid your bird feeder and tease your cat.

You may not know that this pesky creature is actually quite tasty, so next time you catch him and his buddy red pawed in your bird feeder, try this.

Oven Roasted Squirrel

2 squirrels, cleaned and left whole

milk

1 large onion, chopped

1 tablespoon of butter

2 cloves of garlic crushed

salt and pepper

4 carrots, chopped

2 stalks of celery, chopped

Soak the squirrels in milk overnight. Remove and pat dry.

Mix the crushed garlic with the butter and salt and pepper, spread over squirrels.

Place in baking dish and cover with carrots, celery and onion.

Add seasonings of your choice, thyme and tarragon are nice additions.

Bake at 350 degrees one hour or until browned.

Remove and let rest a few minutes before serving.

Serve with a good sprinkling of chopped nuts.
