Haley's Cheesy Guacamole Tostadas

A great summer time, or anytime snack.

Quick and easy and so good, these can be ready in 20 minutes.

What you need:

4 tortillas – medium size cut in half

cooking spray

1 cup shredded cheddar cheese – shred more for topping

2 ripe avocados

2 tablespoons lime or lemon juice

1/2 small red onion – minced

1/4 to 1/2 cup chopped fresh cilantro – chop more for topping

1 tomato chopped – seeds and pulp removed optional

1 small jalapeno chopped fine - optional

salt and pepper to taste

What you do:

Preheat oven to 400 degrees F. You can try these on the bbq too!

Spray both sides of the tortillas with cooking spray, bake on cookie sheet for 5 minutes turn them over and bake another 2 minutes.

Sprinkle with most of the cheese, place back in oven to melt cheese, once melted remove from oven and set these tostadas aside.

Scoop out avocados and mash in a bowl, stir in lime juice, red onion, cilantro, tomato and jalapeno. Season with salt and pepper to taste.

Spread guacamole evenly on tostadas.

Top with more cheese and cilantro and serve immediately.

My daughter Haley made these for me one night and now I request them often. She served them up with a nice bbq'd tequila lime salmon skewer for these pictures. Makes for a nice snack, or a light dinner.
