Maybe I am just anxious for summer to start, officially. I have been craving BBQ and salad. One of my favorite salads is the good old fashioned potato salad. This salad has many variations, this is my basic salad recipe I use and I change it up a bit time to time depending on what I have on hand and how much or how little spice I feel like.

Potato Salad

6 – 8 cups chopped cooked potatoes – I like red potatoes, I leave the skins on

6 hard boiled eggs – 3 chopped into salad and 3 sliced on top

3 celery stalks chopped

3 large radishes chopped

1/2 small red onion chopped

6 dill pickles or pickled asparagus chopped

1/4 cup pickle juice

1/2 cup mayo

2 tbsp dijon mustard

1 tbsp celery seed

salt and pepper to taste

fresh snipped dill or dry dill to taste

paprika

In a large bowl add potatoes,eggs, celery, radishes, onion, and pickles.

Mix the mayo, pickle juice and mustard in small bowl then add to potato mixture.

Sprinkle in celery seed, salt and pepper, and dill. Stir together.

Scoop the potato salad into a lettuce lined bowl, arrange egg slices on top, sprinkle with paprika and dill.

These ingredients are to be adjusted to your taste. So experiment for your next picnic.
