Are looking for a new meal to try out on the grill?

When the traditional burger won't get the job done, Chef at Okotoks Sobeys Darren Nixon has a few recipes up his sleeve that will make you look like a gourmet chef without breaking a sweat.

Nixon says you can even make a Caesar salad have a little barbeque flare.

"Take a whole head of romaine lettuce and you can cut it in half or quarters, you mix your caesar dressing you have everything ready to go. You brush a little olive oil and salt & pepper on your romaine and you throw it on a pre-heated hot grill," he says. "Literally you're looking at about 20 seconds a side and you take it off just so the edges of the leaves are wilted."

Another take on trying something different on the grill is homemade pizzas, Nixon says all you need is some frozen pizza dough from any grocery store it will take a day of planning to make the pizza and have it ready for the next day.

"With my family we buy it, put it in the fridge and the next day it's ready to go. However these pizzas literally take about three minutes to cook they're amazing and people are amazed that you can throw raw dough onto the grill and get a great result."

Finally Nixon says beside the tradition New York strip or T-Bone steak, a flank steak can make a nice tasty alternative just by marinating it before you leave for the day and throw it on the grill at a high controlled heat.

"What I do to get those nice grill marks I'm going to set it on that hot grill, leave it for about two minutes then I'm going to do a quarter turn, leave it for another two to three minutes then I'm going to flip it and do the same thing on the other side and what you end up with is some beautiful grill marks and literally the steak is on for less than 12 minutes."

Nixon says the key is to pre-heat the grill at the maximum heat for a rare or medium-rare depending on the thickness. After you do that, turn the heat down a bit and go through the cooking process of it.
