Here is a versatile recipe that can be served hot as a main course, or cold as an appetizer, and freezes well!

Marinated Pork Tenderloin

two pork tenderloins

two cloves of garlic

Tablespoon or so of fresh grated ginger

1/2 onion finely minced

1/2 cup of soya sauce

1 teaspoon of sugar

ground pepper

Place pork into a freezer bag add all other ingredients and marinade overnight in your fridge.

Pour pork and marinade into a shallow baking dish

Put into a 300 degree oven and cook for 1 1/2 hours.

Eat it hot with side dishes of your choice.

Or

Serve cold, sliced thin with a dipping sauce, plum sauce is delicious with it.

Yum, you will want to cook extra, just try to keep some on hand, it goes fast!

*Tip – cook extra, wrap in tin foil, into a freezer bag, and pop into your freezer ready to go to your next pot luck. Thaw, slice and serve with some dipping sauce.
