Our very own Lynsay McMullan brought these to work today!

Pumpkin spice is in the air this time of year and Lynsay is the expert on it.

Here is what she said about these cookies.

I have made these cookies so many times I pretty much know the recipe by heart and a good thing because the actual written recipe is looking pretty messed up.

Lynsay's Pumpkin Spice Cookies

Cookies

1/2 cup softened butter

1 cup brown sugar

1 1/2 cups (375 ml can) pumpkin puree

1 egg

1 tsp vanilla

2 cups flour

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

1/2 tsp salt

Directions:

Preheat oven to 350.

Cream together butter and sugar, add pumpkin, egg and vanilla, beat well.

In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.

Gently stir in pumpkin mixture until blended.

Drop heaping spoonfuls of dough onto baking sheet.

Bake for 12 to 14 minutes until golden. Let cookies cool completely.

Cream Cheese Icing

1 pkg (250 g) cream cheese, softened.

1/4 cup melted butter

2 cups icing sugar

1 tsp lemon juice and lemom zest - optional

Directions

Beat cream cheese and melted butter with electric mixer until well blended, gradually add icing sugar, lemon juice and zest (if using) blend well and refrigerate to keep chilled.

Once cookies are cooled, spread tops with cream cheese icing.
