Lemon Lime Chicken

Are you looking for a new and easy way to cook chicken? Do you like the zesty taste of citrus? Then this dish is for you. It can be made with frozen chicken thighs for those nights you just don’t have time to thaw and the addition of lemon and lime flavour gives an old favourite a new kick.

Ingredients:

4 chicken thighs - frozen

2 large cloves garlic

1 large onion

1 cup of chicken broth

Handful of fresh herbs – I used rosemary, thyme, sage and oregano

1 lemon

1 lime

Salt and pepper

4 tbsp of lemon curd – optional, for that extra zing of lemon flavour

Directions:

  1. Preheat oven to 375 degrees.
  2. Arrange frozen chicken thighs in a baking pan.
  3. Pour the cup of chicken stock over the thighs.
  4. Slice lemons and limes into thick slices, squeeze some of the juice over the chicken and then place in pan alongside the chicken.
  5. If using lemon curd, spread a tablespoon over each thigh.
  6. Chop up onion, garlic and fresh herbs and add to pan.
  7. Season with salt and pepper.
  8. Bake at 375 for 50 - 60 minutes, or until thoroughly cooked and the skin is crispy and brown. (Adjust cooking time if using thawed chicken.)
  9. Serve with your choice of side dishes, pictured here with roasted zucchini and baked sweet potato.
