Iceberg Wedge Salad with Blue Cheese Dressing

This time of year it can be difficult to find nice fresh leaf lettuce that doesn't blow your weekly grocery budget. Iceberg though, can sometimes be found on sale and lasts longer.

I know iceberg may not be your first choice, however, try this salad, it may change your mind.

Slice the head of iceberg lettuce into wedges.

Place each wedge on a salad plate.

Now you can get creative with your toppings.

Slice tomatoes into wedges.

We used snap peas, asparagus would also be lovely.

Thinly sliced red onion adds flavour and colour.

Top with a generous pour of blue cheese dressing.

Top off with fresh ground peeper and a sprig of fresh basil.

Enjoy!

You can make your own dressing or choose a good quality store bought, you can always add more cheese if you love that blue cheese flavour as much as I do.
