I love wandering around a farmers market on a warm summer day and choosing fresh produce. I really enjoy the combination of fresh greens with fresh herbs as a base to a salad, and then adding something delicious on top.

Here is one for you to try

Farmers' Market Spiced Roasted Beet Salad

Spiced Roasted Beets

Ingredients:

1 or 2 bunches of beets

1 tsp or more ground cumin

1 tsp or more ground coriander

1/2 tsp or more ground turmeric

1 clove garlic crushed

salt and pepper

olive oil

preheat oven to 350

Get your fresh beets from your garden or your local farmers market.

Choose a dozen small or 6 or so medium size beets, red or golden or a combination. Rinse beets well, no need to peel them. Slice off tops and roots, then slice in half or quarters (I put a cutting board in the sink and slice them there to make clean up a bit easier.) Save the beet greens to cook up as a side for your next meal just chop and saute with a little olive oil, garlic, lemon juice and zest, maybe some red pepper flakes. Yum! But I digress...

Place cut beets on baking sheet. (I use a stoneware pan for best results.)

Drizzle beets with olive oil and sprinkle with the spices, toss to coat.

Roast in 350 oven for about 30 minutes.

While beets are roasting prepare the salad.

Salad

Toss together the following:

Mixture of fresh garden greens

Fresh baby dill and/or other fresh herbs.

Crumbled feta or goat cheese.

Add chopped cucumber, or asparagus, or snap peas or other veg as desired.

Top the salad with roasted beets warm from the oven add a squeeze of lemon juice and enjoy!

This is a nice light meal in itself or a delicious addition to a summer BBQ.
