It is Foodie Friday and I don't know about how busy you are, but right now in my house it is Theatre Season. My daughter and I are so busy running to this rehearsal or that rehearsal, we feel like we have a revolving front door one of us is coming in while the other is going out!

We barely have time to sit down and eat together even one night a week.

Our busy schedules will calm down, but in the meantime and because we both love good food, we are trying to come up with quick and yummy meals.

Here is one for you to try.

A quick and easy meal can still be elegant. Am I right?

Elevate your tuna melt to a whole new level and try it with crab.

Crab Melts

1 can of crab meat – use fresh if you have it.

1 stalk celery finely chopped

1 green onion minced

2 tablespoons mayonnaise

1 teaspoon dijon mustard

1 teaspoon or so of lemon zest

squirt or 2 of lemon juice

fresh ground pepper

fresh or dried dill - optional

stir this mixture together taste and adjust.

Prepare the bagels

1 to 2 bagels halved and lightly toasted

grate or slice the cheese of your choice – cheddar, gruyere, swiss, or brie would be nice.

A mild cheese is best so as not to overpower the delicate taste of crab.

I used a combination of cheddar and brie here.

The size of the bagel and how much crab you want on top, will determine if this makes 4 bagel halves or only 2.

You may want to double your crab mixture.

Preheat oven to 350 F

Place bagel halves on baking tray, top with crab mixture and cheese and sprinkle with some dill for flavour and color.

Bake for about 1/2 hour until cheese is melted and bubbly.

Serve it up hot with a generous fresh spring greens salad and – Yum!
