Apple Upside Down Cake

Move over pineapple, the granny smith is taking over some of your turf. This recipe is ridiculously delicious and easy to make.

Ingredients:

½ cup (or more) chopped pecans

¼ cup brown sugar

3 granny smith apples, peeled and thinly sliced

4 eggs

1 cup butter

1 cup granulated sugar

1 cup flour

1 1/2 teaspoon baking powder

1 teaspoon vanilla extract

1 teaspoon cinnamon

¼ teaspoon nutmeg

Directions:

Preheat the oven to 350° and grease the bottom and the sides of your casserole dish. Sprinkle pecans and half of the brown sugar evenly into the casserole dish and bake for 10 minutes. Meanwhile, prepare the apples into slices and set aside. Take a mixing bowl and beat butter, granulated sugar, eggs, and vanilla, then add flour, baking powder, cinnamon, and nutmeg and mix thoroughly.

Place the sliced apples over top of the toasted pecans in an even layer. Sprinkle the remaining brown sugar over the apples, then pour the batter on top.

Bake for 35 to 40 minutes, or until the cake is springy to the touch and toothpick comes out clean. While still warm from the oven, flip the cake over onto a serving plate.

Slice and serve with vanilla ice cream. If desired, sprinkle cinnamon over each serving.
